These Chocolate Truffles are a quick, no-bake dessert that's as healthy as it is indulgent. Customize the flavors by rolling the truffles in coconut flakes, cinnamon, or extra cocoa powder. Ingredients
12 medjool dates, pitted
1 tbsp almond butter (or cashew butter, tahini)
1/4 cup cocoa powder
1/2 cup almond flour (or ground walnuts/pecans)
1/4 tsp sea salt
1 tsp vanilla
Additional cocoa powder, cinnamon, or coconut flakes for coating
Preparation
Place the first six ingredients (dates, almond butter, cocoa powder, almond flour, sea salt, vanilla) in a food processor. Blend until well combined.
Scoop out a spoonful of the mixture and roll it into a ball with your hands.
Roll each ball in your preferred coating: coconut flakes, cinnamon, or cocoa powder.
Refrigerate the truffles for 2-3 hours or until ready to serve.
