These Go Everywhere Granola Bars are a nutritious and convenient snack made with wholesome ingredients like oats, sesame seeds, chia seeds, and almond butter. Easy to prepare, they're ideal for breakfast, hiking trips, or anytime you need an energy boost. Keep them refrigerated for a quick grab-and-go treat that's both delicious and satisfying.

Ingredients

  • 2 cups oats*

  • ¼ cup sesame seeds

  • 3 tablespoons chia seeds

  • ¼ cup flaxseeds, ground

  • 1 teaspoon ground cinnamon

  • ½ teaspoon salt

  • 1 cup unsalted almond butter (or nut butter of choice)

  • ½ cup honey or maple syrup

  • 1 teaspoon vanilla extract

Preparation

  1. Line a 9x9 inch square pan with parchment paper allowing enough room to overhang for easy removal. In a large mixing bowl, combine oats, sesame seeds, chia seeds, hemp seeds, cinnamon and salt.

  2. In a separate bowl, whisk together nut butter, honey and vanilla extract until very smooth. Pour liquid mixture over dry ingredients and, using a wooden spoon, stir until evenly combined.

  3. Transfer the mixture to the prepared pan. Using the back of a wooden spoon or an offset spatula, firmly press the mixture evenly into the pan. Cover and refrigerate for at least one hour or overnight.

  4. Gently lift the parchment or plastic overhang to remove from pan and slice into 16 bars. Keep refrigerated.
