Perfectly balanced with natural sweetness from ripe bananas, these muffins are simple to make and versatile for any time of day. Ingredients
2 cups rolled oats
1/2 cup chopped walnuts
1 teaspoon baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon sea salt
1 egg (or 1 tablespoon ground flaxseed with 3 tablespoons water)
2 ripe bananas, mashed
3 tablespoons avocado oil
2 teaspoons vanilla extract
1 cup milk of choice
1 cup berries (raspberries, blueberries, and/or blackberries)
Preparation
Preheat the oven to 375°F (190°C). Line a muffin pan with wrappers.
In a large bowl, combine rolled oats, walnuts, baking powder, cinnamon, and salt.
In a separate bowl, beat the egg or mix ground flaxseed with water. Add mashed bananas, avocado oil, vanilla extract, and milk, stirring well.
Add the dry ingredients to the wet ingredients and mix until combined. Gently fold in the berries. Let the mixture sit for 10 minutes to thicken.
Fill each muffin tin 3/4 full with the mixture.
Bake for 40-45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Let cool before serving.
